Santoku Knives

Santoku means 'three virtues' in Japanese, and the Santoku knife can handle all three major kitchen cutting tasks. The santoku style is a shortened and rounded blade and the knife is generally between five and eight inches long. It has a flat edged blade. The top of the santuko handle lines up with the top of the blade, giving your fingers plenty of room underneath. The santoku knife can slice, dice and mince with precision and all great chefs own at least one top-quality santoku knife.

The santoku knife has more steel at the tip of the blade and a flatter belly and usually does not have a bolster. You do not 'rock' the knife as you would a Chef's knife. You should use a chopping motion to cut efficiently and effectively with a santoku knife.

Many santoku knives feature a hollow ground edge-known as a granton edge. This ensures that you will get super thin slices and that individual slices won't stick to the blade.
